BLBE – Curries….yum!

I’m making some more pre-portioned freezer items for my packed “suppers” tonight. I was thumbing through my favourite Indian book (Curried Flavours), and as I was looking through the ingredients – they are mostly zero points! Tonight’s recipe – Chickpea & Mushroom – is essentially that – chickpeas, tomatoes, mushrooms, onions, garlic, spices. Aside from the Chickpeas (1/3c = 1pt therefore 4 cups (2 cans) is 12 points), and the miniscule bit of olive oil I used to start off the onions – that’s it!

Since this is likely to produce over 12 portions… that’s a filling 1 point meal! These will be flat-packed (snack size zipper baggies) in 1/2 cup portions.

I’ve also got 3 cups of brown basmati rice on the stove, cooked with homemade de-fatted chicken stock. I usually flat pack these in 1 cup portions, and just break off 1/2 cup for my “freezer dinner”.

So much fun creating them – just unpeel the zippy bag off of the “protein/meal”, break off 1/2 cup of brown rice, spelt, or barley. Throw on a handful (about 1/2 cup) of frozen veg (usually green beans) – and there you have it. Mix and match. I’ll put this together at lunch, and by the time I’m at class in the evening- it’s starting to thaw. Since there are plenty of microwaves around this school – it’s easy to have a healthy meal.

For lunch today – Chipotle Turkey, Roasted Butternut Squash (also flat-packed), and green beans. 5 points!

Weight continues to be on a downward trend – exercise happened Monday night (40 minutes treadmill – Xtrain), and there will be some tonight as well after supper. Tuesday & Wednesday are my class nights and I don’t get home until late. Because of the bus strike, my ride to class on Wednesdays forces me to leave work at 3. So I have to make up 2 hours over the week. Makes it challenging indeed to get the exercise in on those days – since I have to be at work earlier….

Things are coming together! I’m so much more motivated than before…my teammates rock!

    (I’m also trying to loose some (pregnancy) weight, but am no way near as motivated as you are. But this weekend, what with bus strike and crazy cold weather, I think I’ll spend it cooking and freezing!)
